Stewed fried-tofu and mushrooms

I made stewed Atsuage(fried-tofu) and mushrooms
Atsuage is thick cut, fried tofu with a firm texture. It’s also used as a meat substitute in vegetarian food for monks who abstain from meat. Tofu is a healthy food that’s gained popularity overseas Atsuage, fried-tofu, is also good taste.

It’s juicy and soaked in broth, and my vegetarian friend loved it when coming to Japan. You normally flavor it with dashi, sake, or soy sauce. The color of Japanese food, however, tends to become brownish since soy sauce is used so much. If you add some color with snow peas or spring onions, it will look and taste more delicious!

How about try to make Japanese dish with Japanese Santoku knife? It’s easy to handle and cut beautifully even soft Tofu.
