Tempura / Fried summer vegetable

Japan has been seeing hot summer days with highs of approximately 40℃.
On such hot days, people enjoy a fix of Soba or Udon noodles that is tasty and helps them stay cool.

Today I enjoyed the Udon with some Tempura, fried summer vegetables, such as eggplants or okuras.


Coat your fried vegetables with flour, potato starch and water – and not eggs – to make the perfect light summer dish.
